Depends where you live but if you live in the UK, quite a lot of it. There are various Acts prohibiting discrimination, whether that be blatant discrimination or behaving in ways that may lead other people to feel embarrassed because they fall into diverse groups.
For example, in the UK we have legislation protecting people from discrimination/humiliation on the grounds of:
Disability;
Gender;
Age;
Religious Belief;
Sexual Orientation; and
Race
This means that the likes of Dave Allen, who used to make religious jokes, would not be able to do this today (he is now deceased but this is just an example).
From December this year, the disability duty contained within the Disability Discrimination Act will mean that we will all have a duty to promote and facilitate the role of disabled people in society and from next April, the gender duty, contained in the Gender Equality Act, will mean that we all have a responsibility to promote equality of opportunity between men and women. For the first time, employers will face harsh fines if they do not undertake the specific requirements of both the disabiity duty and the gender duty. This means that for some, it will seem as though the PC brigade really has gone mad. They won't have. That is a very good qustion. I wonder what would happen on an average day If I decided to be non-pc and speak my mind? Would I be arrested for expressing an opinion or not being tolerant of other's faith or colour according to the freedom I am allowed under current laws? Good question. Much of the most bizarre nonsense seems to arise from locally elected officials implementing their policies via the councils. I remember one London council removing the portraits of past mayors from the town hall because there were no black mayors. Some decisions are by misguided paid officials such as the recent case when a Post Office clerk refused to process a child's passport application because the photo showed the exposed shoulder and would offend Muslims. More and more all the time.
I feel a lot of it is taken too far but the Equal opportunities and diversity legislation is real also Race Relations is covered by law.All employers and employees must abide by these laws as well as people on the street.How much of this 'Politically correct' stuff is backed by legislation?

There are rigid anti-discrimination laws which are enforced in this country.
Not sure about actual legislation - but in employment, a lot of employers could try quoting "gross misconduct" - possibly leading to termination of employment.
Obviously racism and hate crimes are covered. Depending upon the use of the "politically incorrectness" I am sure a law of some sort could be used - harrassment etc.
